125 g Butter
75 g Hazelnut praliné

Preparation
Recipe for 35 truffles
Method
Melt the chocolate in the microwave.
Beat the butter until light and add the hazelnut praline, continue to beat.
Finish by mixing in the melted chocolate.
Transfer to a piping bag and pipe the filling in long strings on a plate lined with baking paper.
Allow to firm in the fridge.
Finishing
Melt the chocolate in the microwave before finishing.
Place the shavings on a plate.
Completely dip the cold truffle pieces in the warm chocolate and immediately roll them through the flakes.
Tips for extra finishing
You can always add 20g of alcohol of your choice to the truffle dough.
You can also replace chocolate shavings with with flaked almonds Bakers@Home or cacao powder.
